How To Cook Quinoa:Directions:- Rinse quinoa in a strainer to rinse away the bitter covering (it can be found pre- washed).- Use 2 parts water to 1 part quinoa.- Place water and quinoa in a pot on the stovetop and bring to a boil.- Once the water starts to boil, cook for 10 minutes with the cover off then add the cover for the last 5 minutes.Total cooking time: 15 minutes.Lemon & Garlic Quinoa Salad:Ingredients:- 1 cup quinoa to 2 cups water - cooked (See recipe above)- Pinch of sea salt- 1⁄2 cup carrots, chopped- 1/3 cup parsley, chopped- 1⁄4 cup sunflower seeds- 2 stalks of celery, chopped- 1 cup baby tomatoes, sliced in half- 1⁄2 cup raisins- 1/2 cup black beans- 1⁄2 medium red onion, chopped- 1/2 cup cornDressing:- 2 cloves garlic, chopped- 1⁄4 cup freshly squeezed lemon juice- 3 tbsp. extra virgin olive oil- 1 tbsp. tamariDirections: - Prepare dressing and place in a large bowl. Add carrots, seeds, celery, tomatoes, raisins, onion, corn, black beans and parsley. Add cooked quinoa and toss well. Serve at room temperature or chilled.Feel free to add more vegetables of your choice; omit the sunflower seeds; or omit the garlic in the dressing.*A classic recipe from Feeding the Whole Family
